Gajar halwa or carrot pudding is a very famous dessert in India. This is the one dessert which is everyone’s favorite and you can prepare it in bulk at home. Gajar halwa is generally prepared with red carrots which is only available during winter season in India. Thus, making this halwa a very special winter dessert throughout the country. This halwa generally involves a lot of ghee or milk fat to enhance the flavours more. This exquisite indian dessert can be found in any occasion. It has a special place at food counters in wedding ceremonies.
Today, I have curated a “no ghee gajar halwa” recipe for everyone and especially for people who are health conscious. People with high risk of heart disease or any other disease which does not allow to have any grease or oily food can try this recipe at home.
Ingredients for making gajar ka halwa
- Red Carrots: 1.5 kg
- Milk : 1.5 liter
- Sugar: 300gm or 1+ 1/2 cup
- Cardamom powder: 1/2 tsp
- Cashew nuts: 2 tbsp, chopped
- Almonds: 2 tbsp, chopped
- Raisins: 2 tbsp
Cooking procedure for Gajar halwa
For prepping your carrots well, firstly wash them well. Slice up the end tail & head and grate them manually or in food processor. Squeeze all the nutritious red colored juice of carrot and keep it aside and your carrots are ready to go for halwa cooking procedure. This will reduce the cooking procedure to a very great extent. Carrot juice is very good for skin and eyes. It is a powder pack of vitamin A, vitamin C and vitamin B-6. Being high in beta carotene content is a powerful antioxidant.
For making this “no ghee gajar halwa” without ghee, you firstly need a perfect non stick deep pot. A non stick pan or pot helps you to eliminate fats or oil in your food. This is the best boon ever for health freak people that not to add oil in their dish when it is been prepared in a non stick cookware. So, for halwa, add 1.5 liters of milk in the non stick cookware and heat the milk at medium flame.
Continuously stir the milk and scratch the sides to get a creamy texture of milk. Keep stirring the milk for about 10 mins. As the milk reduces and starts to get boils add the grated carrots to it and mix well. Now this involves a lot of continuous stirring at medium flame. Combine everything well and stir continually with light hands. Keep scratching the sides of the pot for any milk agglomerates. With time and continuous stirring, the combination of milk ad carrots will thicken and the moisture will evaporate.
At this point we will add few more ingredients such as cardamom powder and sugar. Mix well again. As the sugar gets dissolved, the color intensifies well into bright red color. Combine the whole mixture well and let it cook for 15 more mins at low medium flame. Again , till this point I haven’t used a single drop of ghee. Continuing with the same procedure will give you good results too. Give everything a last stir and add the chopped dry fruits. Spare some for garnishing also.
