Soya nuggets is an excellent source of quality protein. Extracted from soya beans it also serves the purpose of being an alternative for meat lovers. - Soya Nutrela: 100gm
- Onions, chopped: 2 medium
- Tomatoes: 2 medium
- Garlic cloves: 4-5 nos
- Ginger: 1 inch
- Green chillies: 1-2
- Curd: 1/2 cup
- Soaked kashmiri red chillies: 2-3
- Garam masala powder: 1 tsp
- Whole spice mix: 1 bay leaf + 1 big cardamom + 1 inch cinnamon stick
- Coriander powder: 1 and a 1/2 tsp
- Cumin seed powder: 1/2 tsp
- Salt: 1 tsp
- Oil: 2 tsp
- Coriander leaves: for garnishing
Preparation for Soya Nugget Curry
Marinating the Soya nuggets
We will start by preparing the nuggets for cooking. In a deep pot, boil 1/2 ltr of water and add the nuggets. Make sure the nuggets are submerged in water properly and soak the water throughout the boiling procedure. Boil at medium for about mins and strain the excess water. Whip 1/2 cup curd with 1/2 tsp of salt in a bowl and the boiled soya nuggets to it. Mix well and marinate the soya nuggets with the curd for 15-20 mins. This helps to removes the bitterness from the soya nuggets thus leaving them flavourful of curd.
Making the curry
Make a paste of tomatoes, soaked kashmiri chilli, garlic clove and ginger. You will a nice thick red colored paste. Heat a kadai and add oil to it. To this, add the whole spice mix and roast for a few seconds as you dd chopped onions to it also. Fry the onions to slightly brown. This gives our gravy nice texture and caramelised flavour. Further to this, add the ground spices like garam masala, coriander and cumin seed powder. Roast the masalas well. Ifyou fee lthat the masala is sticking to the kadai add few tsps on water to it. While to fry the masalas add the tomato paste to it and fry well. You will get a thick red gravy like structure.
Fry everything well until the oil is released from sides. Add the marinated soya nuggets to it and mix well. Cover and cook everything for 10 mins well till you get a combined curry structure. Add water more to adjust the thickness of gravy as nuggets tend to soak more. You can also add salt you want to balance the taste more. Garnish the delicious soya nugget curry with chopped coriander leaves and serve with rice or chapati.
